Tales from the Garden

Binh Quoi is a riverside area on the outskirts of Ho Chi Minh City, where canals, gardens, and small-scale farming offer a slower rhythm than the city beyond it. This program invites students to explore the relationships between food, nature, seasonal traditions, and community life.

Through place-based learning and shared reflection, students consider how everyday choices connect to the health of the land and the people who care for it. The journey creates space to build connection, practise mindfulness, and reflect on renewal as a new year begins.

Day 1

Morning: Depart for Binh Quoi by private couch (1 hour away from the campus). Begin the journey and settle into the peaceful riverside community.

Afternoon: Group Orientation & Welcome Games: Build friendships through fun team activities and get to know the program.

Potluck Dinner: Share a meal, connect around the fire, and reflect on the day together.

Sample Itinerary

Day 2

Morning: Visit Vuon Xa Ban - a local permaculture farm in Binh Quoi. Discover permaculture practices and learn how food is grown in harmony with nature.

Afternoon: Making Traditional Bánh ít & Foraging for Wild Greens Behind the House: Learn a traditional recipe while foraging for fresh ingredients from the garden.

Evening: Group Cooking Challenge: Work together to prepare a delicious meal using locally sourced ingredients.

Day 3

Morning: Food Storylines & Love Letters to Food: Reflect on the journey through storytelling and gratitude while learning the tradition of preparing apricot blossoms for Tet.

Afternoon: Depart home.
